Just because we are vegan, that doesn’t mean we have to put up with flavorless soups or watery salads. Vegan meals tend to be healthy, but every so often, we want something delicious and indulgent to get our teeth into.

So if you have a couple of vegan cook books, but you are bored of the same old recipes, then you’re in luck because this blog post will show you two fantastic recipes for you to try out. If some of your Cheeky Bingo friends or gym class pals are also vegan, why not invite them over and turn your Saturday afternoon into a fun cooking session?

Peanut and sweet potato hotpot

Ingredients

2 tbsp oil

1 onion

14oz sweet potatoes

1 tsp chilli

A can of chopped tomatoes

A handful of roasted peanuts

1 large red pepper

1tsp cumin seeds

Method

1. Begin by heating the oil in a pan and fry the onion, the pepper and the cumin seeds until brown. Meanwhile, boil the sweet potato until tender.

2. Drain the boiling water, place the potatoes back in the pan and add the can of chopped tomatoes along with 2 cups of fresh water. Add the chilli and simmer for 15 minutes.

3. In a food processor, blend the peanuts until finely ground and add them to the pan. Stir well and simmer for a further 15 minutes.

4. Serve with some crusty bread and garnish with coriander.

Summer Pudding Sandwich

This indulgent fruity dessert is sure to go down a treat.

Ingredients

10oz strawberries

11oz raspberries

6oz sugar

10 slices of bread

Method

1. Melt the sugar with a dash of water in a large pan and boil for 1 minute. Add the fruit and cook until soft.

2. Line a baking tin with a layer of bread and pour in all of the fruit and top with half of the juice. Layer with more bread, so you’ve created a sandwich shape, and top with the remaining juice.

3. Chill for several hours and serve with cream.
