Manila: Vegan Linguine with Tomatoes and Vegetables
We stayed in Makati City, metro Manila for a week with the host (Sept 18 – 24). Before our last day, the host invited us to his close friend’s place for a goodbye lunch. His close friend is mixed Spanish and Filipino, a travel agent, and apparently had history with one of the most prominent figures in Manila. She has two maids, a massive flat, and four lovely dogs of all kinds: deaf & blind (nearly 20-year-old pug), very old & gentle (black Labrador mixed breed with grey eyebrows), bark constantly at strangers (looked like a Chihuahua), and the most groomed (The Pomeranian). One of her housekeepers made us vegan linguine with fresh tomatoes and seasonal vegetables as well as salad and mangoes.
