Veronica Stenberg: Vegan Mini Pizzas

Let’s welcome my fabulous Swedish galfriend: Veronica. She will be doing a five-day series on Vegan Miam! Tack så mycket!

★ Veronica Stenberg: Vegan Mini Pizzas ★
Vegans or non-vegans alike, all love my pizza. They always go down as a charm. With this recipe you can make one big batch or you can divide the dough into smaller pieces, and thus making cute mini pizzas. Perfect food for a cocktail party!

Veronica's Mini Vegan Pizzas

YOU WILL NEED

  • Pizza dough (see recipe below)
  • Homemade cashew cheese or any other cheese substitute
  • A batch of Tomato sauce, preferably homemade
  • Yummy toppings of choice – used aubergine, mushrooms, pine nuts and rocket salad

PIZZA DOUGH RECIPE:

  • 2 dl water
  • 1 pack of dry yeast
  • 1,5 tablespoons of olive oil
  • 0,5 teaspoon of sea salt
  • 5 dl of flour to choice

 

HOW TO:

1. Heat water to the temperature instructed for the yeast you are using – add the yeast and blend
2. Add oil and salt
3. Mix in the flour, little by little and stir well
4. When the dough stops clinging to the side of the bowl, let it rest for 30-40 minutes under a baking cloth
5. Once the dough has risen, massage it for a while, add a sprinkle of flour if need be
6. Divide the dough in 8 or 10 small buns (depending on how small you want the pizzas to be)
7. Flatten the buns on a baking tray with baking paper
8. Add the tomato sauce
9. Add your cashew cheese on top of the tomato sauce (you might have to mix it around a bit)
10. Add your toppings
11. Put the pizzas in a pre-heated oven, 225-250 C – for about 15-25 minutes. (Keep an eye on it, I’ve noticed that it takes different times depending on the thickness of the crust and the amount of toppings!)
12. take out your pizzas and add the rocket or fresh basil on top of them
13. Serve your guests immediately!
