Vegan Dining at Sheraton and Westin Resorts in Fiji

(October-November 2012) Continued from the previous post on our review for Westin Denarau Island Resort & Spa in Nadi, Fiji Islands, I’ve been dying to post our vegan eats from our Nadi, Fiji trip! We stayed five nights at Westin Denarau Island Resort & Spa and e-mailed directly to the hotel regarding vegan options.

We received a direct response the following day from the Chef de Cuisine Complex with detailed information regarding the options available and their willingness to accommodate our vegan dining requests. The Chef de Cuisine Complex is responsible for overseeing all restaurants on the grounds of the Fiji Starwood properties: Westin Denarau Island Resort & Spa, Sheraton Fiji Resort, and Sheraton Denarau Villas. When you stay at one Starwood property such as Westin Denarau Island Resort & Spa, you have access to the grounds of all three. Between them there are a number of pools, restaurants and other facilities. The Bula Bus will transport you between the three Starwood properties and the Denarau Golf & Racquet Club for free, and for a fee will also take you to the Denarau Port Marina where most ships and seaplanes depart for the islands.

Once here at the hotel if you contact one of my Sous Chefs or myself, we would be more than happy to meet and talk to you through our vast array of dining options.

We met The Chef de Cuisine Complex and his sous chefs on the first day; they were very generous and kind. Upon arrival at each restaurant, we were asked how much food we would like, how many dishes for each courses and what we couldn’t eat. In most cases, we received two different dishes, but at Flying Fish, our meals were the same, but both fabulously tasty. We loved the meals at Flying Fish, especially Chef Peter Kuruvita’s vegan Butternut Squash Pumpkin Curry with Brinjal Roti and Cassava Cake with Coconut Cream and PawPaw and Mango. Absolutely amazing way to finish off our last evening in Fiji!

Day 1: Zing at Ocean Terrace

On the first night we had Indian food.  We don’t typically eat much Indian food but we had been informed that the property had a vegan Indian sous-chef and she was eager to prepare something for us. The Chef de Cuisine Complex arranged for us to go to Zing Menu at Ocean Terrace (@ Westin Denarau Island Resort & Spa).

Zing at Ocean Terrace @ Westin: Vegan roti, carrot pickle (gajar ka achar) and potato-cauliflower indian curry with rice. Curry was super spicy compared to other Indian foods I’ve had in the U.S.! Thanks Chef Andreas & Sous Chefs!

Day 2: Zing at Ocean Terrace

On the second night, we wanted Asian comfort foods and something refreshing to start after our first filling dinner. Again, we dined at Zing Menu at Ocean Terrace (@ Westin Denarau Island Resort & Spa).

Zing at Ocean Terrace @ Westin: Vegan soba noodle salad with grilled eggplants and dressing. The soba noodle salad was ridiculously delicious and refreshing. This was a nice salad to start the meal.

Day 3: Fiji Premium Club House

We were hungry that day and wanted something for lunch instead of dinner so we ended up having vegan wood-fired pizza at Fiji Premium Club House (@ Denarau Golf and Racquet Club). Take the Bula Bus to Denarau Golf & Racquet Club for free from the hotel. Fiji Premium Club House provides a family casual dining experience for lunch and dinner including a sports lounge.

Day 4: Flying Fish

Sheraton Fiji Resort

Peter Kuruvita’s Flying Fish is the premier restaurant at the Sheraton Fiji Resort.  One of just four restaurants in Chef Peter Kuruvita’s portfolio (two in Australia and another in Fiji – Steakhouse by Peter Kuruvita at The Westin Denarau Island Resort), this beachside establishment offers stunning sunsets that are second only to their food.  You might recognize Peter Kuruvita from one of this many great food-travel shows on SBS in Australia, where he comes across as a down to earth guy with an amazing joie de vivre.

One of the vegan mains we had at Flying Fish was Butternut Squash Pumpkin Curry with Brinjal Roti (excluding dairy and ghee), which was full of flavors and beyond spectacular. The Brinjal Roti had eggplants, mustard seeds and other spices, and I loved the bready parts. What an amazingly delicious roti! Now I’m keen to try his recipe since it was so good and it’s still on my list of dishes to make. Maybe I will try this recipe for Thanksgiving!
