Vegan Hot and Sour Noodle Soup

I have been making vegan hot n’ sour noodle soups lately all summer. I grew up around noodle soups and I enjoy my hot and sour flavours. In the soup broth, I use sesame oil, Chinese black vinegar, soy sauce, chili oil, chili flakes, white pepper, Sunchang Gochujang , Better Than Bouillon, No Chicken Base, and plenty of cornstarch with water. This is my daily soup broth for any sorts of Chinese noodles. Definitely use green onions and cilantro as garnish.

2 cups of water
1 tablespoon no-chicken base broth (vegan vegetable broth is good)
1 tablespoon korean chili paste (gojuchang is ok) or any garlic chili sauce
4 tablespoons Chinese black vinegar
2 teaspoons white pepper (different than black pepper)
1 teaspoon sea salt
1 teaspoon ginger powder or minced ginger
1 teaspoon chili flakes
2 teaspoons sesame oil
2 tablespoons soy sauce
3 oz firm tofu, drained and pressed. cut into small 1/2-inch square cubes.
under 1/4 cup frozen peas
1/4 cup napa cabbages, chopped
under 1/4 cup fresh shiitake or any mushrooms, chopped
1 medium carrot, roughly chopped
1 tablespoon cornstarch or tapioca starch mixed with 2 tablespoons water
1 green onion, finely chopped for garnish
1/4 cup cilantro, finely chopped for garnish
pickled Chinese cabbage, chopped for garnish

1. Cook about 1 serving of noodles (any Chinese noodles, thin or wide). After the noodles are cooked, put it in a bowl. Dress it with 1 teaspoon of sesame oil, 1/2 teaspoon white pepper, 1 teaspoon black vinegar and 1/2 teaspoon soy sauce. Mix the noodles in. You can actually snack on it alone. It’s a very basic Taiwanese noodle snack dish.

2. Boil water, add no-chicken base or vegetable broth. Let it boil.

3. Add carrots and shiitake mushrooms, cook for 2-3 minutes. Add soy sauce, red chili paste (or garlic chili paste), white pepper, sea salt, chili flakes.

4. Add diced tofu, napa cabbages and frozen peas. Cook for 2-3 minutes. Add sesame oil, black vinegar.

5. Dissolve the cornstarch in the water and stir until smooth. Mix that into the soup and continue to simmer until thickens. Add more cornstarch if the soup is not thick as it should look.

6. Garnish the soup with chopped green onions and cilantro (optional: pickled Chinese cabbage).

7. Pour the soup over the noodles in the bowl. Happy Noodle Soup Day!
