I am very silly with dish names indeed. I am in love with Daiya cheddar-style shreds already. It has more flavour and colour than the mozzarella style shreds.

With my grand obsession on pizzas, I wanted to make myself a pizza bread with breaded eggplants. Breaded eggplants are a great alternative to cheesy breaded sticks.

Ingredients

  • Any fresh bread loaf (a bit dense, but not too dry). I used Whole Foods organic daily bread loaf, which was a good example. Slice the bread loaf into into 1.5″ thick slices. Make sure you lightly grill them first.
  • Daiya cheddar-style shreds
  • any Tomato sauce from Trader’s Joe (Dress it with fresh chopped basil, garlic powder, sea salt, and pepper for more flavour)
  • Breaded Eggplant Sticks. You can get them at some kosher Jewish shops or you can adapt the recipe from Chow Vegan (replacing eggplants and more breadcrumbs).

Once you gather tomato sauce, Daiya cheddar style shreds and cooked breaded eggplants on a lightly grilled bread slice, broil them for 3-5 minutes.
