I fly on average ten times per year, and it is a bit difficult to cook your own meals when days pass so quickly during your travel or perhaps natural food markets are not easily accessible depending on where you are. On busy days, you feel obligated to prepare delicious quick meal-to-go and move on with your tasks. Leahey Foods, Inc. serves healthy VEGAN dishes that are easy to prepare, for any consumers. No Beef Noodle Soup has a deep, dark and hearty vegan “beef” broth, making it irresistibly tasty with small ribbon pasta. The broth is darker than No “Chicken” broth as reviewed below. I could taste the tomato pieces, plus the textured soy protein for a bit of texture. I couldn’t see the textured soy protein very well due to the dark broth, but you could see them very well in the No “Chicken” broth. It is definitely a hearty one serving!

No Chicken Noodle Soup has a golden yellow vegan “chicken” broth with small ribbon pasta and red bell peppers. You might notice the No Chicken Noodle Soup looked a bit thicker than the No Beef Noodle Soup I photographed due to different cooking method. I added one cup of water, let the pot boil and added the No Chicken Noodle Soup mix. I stirred until dissolved, covered for 5 minutes at low heat. I uncovered, stirred for 3 minutes, added 1 TBSP cold water and turned the pot off. I left it aside for 5 minutes. It made my No Chicken Noodle Soup a bit thicker, creamy and savoury. Doni stated that this noodle soup is full of flavours and he could smell it right away from the kitchen. Leahey Foods makes signature soup broths. I hope to see more of her broth products, that can be useful for cooking.

No Beef Rice Soup has the same vegan No “Beef” broth as the noodle soup (reviewed above), except it is GLUTEN-FREE. If you prefer a watery broth soup: add 1 1/2 cup of water, boil and pour the mix and cover for 5 minutes, turn off and leave for 5 minutes. If you prefer a creamy and thick broth soup: boil 1 cup of water, add No Beef Rice Soup mix, stir continuously. Let it cook for 2 minutes as it thickens, add 1/4 cup of water, stir. Cover for 3 minutes, heat at low-medium heat. Uncover, stir continuously because the rice may stick to the bottom of the pot. Add 1 – 2 TBSP water if rice seems sticky to the pot. I grew up around hearty and broth rice soups, and this is one of the most delicious vegan “Beef” rice soups ever. Miam!

No Chicken Rice Soup has a golden yellow vegan “chicken” broth with pre-cooked long grain white rice, textured soy protein and red bell peppers. You might notice the No Chicken Rice Soup looked quite brothy due to more water. Either way, I like my rice soup either brothy or creamy. I’m a soup person. I could already smell a mixture of yeast, onions and garlics in the spices after opening the bag. It reminded me of a homemade chicken rice soup I had when I was a kid being ill for a short period of time. It’s great for one serving. I would love to see a family bulk size for 3-4 people. Plus it is GLUTEN-FREE.

Cheese Type Flavored Broccoli Soup is a vegan and GLUTEN-FREE cheese soup with broccoli. It’s creamy and yummy. The cheese broccoli soup would taste amazing in a sourdough bread loaf as a soup bowl due to the thickness and vegan cheesiness from the soup. I would love to do that another time. I boiled 1 1/2 cups of water, added the cheese broccoli soup mix at medium heat and stirred occasionally as it thickens up.
