The Oh She Glows Cookbook: Effortless Anytime Balsamic Vinaigrette

For the Effortless Anytime Balsamic Vinaigrette (Page 283, The Oh She Glows Cookbook: Over 100 Vegan Recipes to Glow from the Inside Out) I used only a teaspoon of dijon mustard (less than what it called for) since we use a very spicy dijon mustard. If you have a mildly spicy dijon mustard, follow Liddon’s recipe! The vinaigrette is tangy and lovely from the apple cider vinegar and unsweetened apple sauce. It is garlicky with a nice sweetness from the maple syrup. I recommend adding freshly ground black pepper. I made my own unsweetened apple sauce for the recipe; it’s pretty easy to make (see recipes note below). Liddon’s dressing will be one of our favorite staples and it is perfect on a variety of salads.

Effortless Anytime Balsamic Vinaigrette

The Oh She Glows Cookbook: Effortless Anytime Balsamic Vinaigrette

Yield:¾ cup (175 mL)

Gluten-free, nut-free, raw/no-bake, soy-free, refined sugar-free, grain-free

Ingredients

  • ¼ (60 mL) apple cider vinegar
  • 3 tablespoons (45 mL) flaxseed oil or extra-virgin olive oil
  • 2 tablespoons (30 mL) balsamic vinegar
  • 2 tablespoons (30 mL) unsweetened apple sauce (see notes)
  • 1 tablespoon (15 mL) pure maple syrup
  • 1½ teaspoons (7 mL) Dijon mustard
  • 1 clove garlic, minced
  • ¼ teaspoon (1 mL) fine-grain sea salt, or to taste
  • Freshly ground pepper

Method

In a small bowl, whisk together all the ingredients or simply combine them in a jar, screw on the lid, and shake. This dressing will keep in an airtight container in the fridge for at least 2 weeks.

Angela’s Tip: Feel free to adjust this dressing to suit your own taste preferences. I tend to like an acidic bite to my salad dressing, but if you prefer less acidity, simply decrease the vinegar or increase the sweetener. Have fun and play around the amounts!

Rika’s quick unsweetened apple sauce: I prefer to make my own apple sauce, it’s super easy and quick (and great as a snack for leftover). Peel, core and chop 4 apples. Bring 3/4 cup water in a pot and bring to a boil. Add apples and 1 TB lemon juice. Reduce the heat to a low setting, cover with a lid and simmer for about 5 to 10 minutes, or until apples are tender. Blend it using a hand blender after it is cooked.
