In December 2012, we rented a car to get these yummy vegan donuts and explore the Red Rock. I was informed by the two lovely ladies of TheVedgeApp to drop by Pura Vida Bakery & Bystro and I was too full to try something new because of these donuts. If I haven’t known those two ladies, I would have not gone all the way there, and I’m grateful for their advice. It was probably the best vegan meal I ever had in Las Vegas despite the vegan-friendly meals I’d tried at the Strip. Thank you, Pura Vida Bakery & Bystro and Chef Mayra, for making my last day filled with vegan and 100% cruelty-free goodness. We ordered a take-out, and it is best to call in advance (40 minutes prior) because food is made to order. The staff at Pura Vida was warm and hospitable, her name is Cindy Hodgkins. She loves my name, Rika and I love Chef Mayra’s foods. We only saw Chef Mayra briefly, but she was busy in the kitchen.

Las Vegas: Pura Vida Bakery & Bystro You may notice a festive Christmas decor because the photo was taken in early December. Retro looking diner style interior and very relaxed atmosphere. Colorful chairs and walls. The restaurant is couple blocks from the Las Vegas strip, but that said it is in a location that requires driving from the Strip. There is a small parking lot out front.
WOW Breakfast Puffs This is my favorite dish, the WOW Breakfast Puffs, covered in a very delicious vegan cheesy sauce and pomegranate seeds. It is filled with a hearty mixture of tofu scramble, vegan sausage, soy riso, and veggie, even decorated with orange slices and flowers. They did not have guacamole at that time because the avocados weren’t in season in December. Instead, we had a freshly made salsa, which worked well with the breakfast puffs. It was a very beautiful, memorable vegan dish.
The Latin’Tude This item is on their online menu and is one of their savory breakfast dishes, served all day every weekday. The Latin’Tude is a Southwest fusion burrito filled with black beans, refried beans, soy riso, tofu scrambles, vegan cheese, veggies, onions, garlic, cilantro, tomatoes, roasted organic potatoes with poblamo peppers. It is definitely not a spicy breakfast burrito, but it is a hearty one!
Pura Vida Bakery & Bystro also serves weekend brunch all day every weekend, which includes all fruit in season, and you can check their Pura Vida Weekend Breakfast board. They also have waffles, pancakes and frenchies served on all day every day, except for few items that are only served weekdays until 11:30am. Their bakery has a small selection of sweets such as muffins, breads, cookies, cakes, brownies and more.
