If you are looking for a decent vegan-friendly Mexican cuisine, I would recommend Border Grill Las Vegas. We were there in 2010. It was run by a former Top Chef master Susan Feniger. Our dish was customized and off-the-menu. We had plates of two handmade corn tortillas with black beans, lettuce and fresh tomatoes served with warm black beans, red and green rice, including a small dish of freshly made guacamole. I love their guacamole.
