There is only one “fun, affordable, and sustainable” 100% vegan restaurant in Eugene, Oregon that serves fabulous Southern vegan comfort food: Cornbread Cafe. You will find yourself craving a down-home comfort with these delicious and wholesome favourites such as Mac unCheese, Mashed Taters & Country Gravy, cornbread, Chicken Fried Tempeh & Country Gravy and plenty of juicy “sammiches”. Cornbread Cafe started out as a busy vegan food cart on the corner of 13th and Oak (downtown Eugene) in January 2010, and later in summer 2011, they opened a diner-style restaurant with retro decor in West Eugene.

Classic – Scrambled Eggfu, herbed potatoes, tempeh bacon, & flapjacks with maple syrup.
It is impressive to see owner Sheree’s veganized egg scramble. The classic scrambled eggfu is intended for anyone who likes to add condiments, salt, or pepper on it. I usually like mine with hot salsa or Daiya or Sheree’s unCheese sauce if I took it home. The texture of the tempeh bacon was very good with nice firm texture (not mushy at all), and dry with good flavour. I would sadly say that the herbed potatoes was a downside because they were huge chunks (some were hard, some were well cooked). It would be nice if they can slice these potatoes smaller with more herb & seasoning. I think it would be cool to have hashbrowns or some sorts of potato patties (yum!). As for the flapjacks with maple syrup (below photo), it comes with Earth Balance vegan butter. That flapjacks tasted so good with loads of sweet maple syrup and melting butter! So far, it was a decent vegan Southern comfort breakfast!
Breakfast Burrito – Scrambled Eggfu, herbed potatoes, tempeh bacon with unCheese and salsa sauces.
It was a breakfast special before Mother’s Day, which will be added to the current breakfast menu soon. That was probably one of my favourite dishes for breakfast. I love any kinds of breakfast burritos, but this one was a massive kind – the one you have to dissect it with a fork and knife indeed! It has everything in it: Sheree’s famous scrambled Eggfu, herbed potatoes, tempeh bacon with unCheese, salsa and garnished cilantro. I absolutely love the combination, except for the big chunky herbed potatoes (had to remove them because they were too big for me to eat and bland.)
There are other photos I’ve taken with my iPhone (as you can see, they are not as pretty as my first ones). Other meals I’ve photographed below are Classic Breakfast, Rancheros, Phish Sticks combo, Shredded Barbeque Seitan Sammy and side dish of Mac UnCheese. The rest tasted good, except for the shredded Barbeque Seitan Sammy which was too sweet for my taste (we like spicy, so hopefully they make a spicy version!).
