The Houston-based mother and daughter-run company, Zibble Inc., makes VEGAN, GLUTEN-FREE ready-made frosting in two flavours: Vanilla and Chocolate as well as VEGAN bite-sized cupcakes (in chocolate and vanilla as of August 2012, and not Gluten-Free).
The team recently launched an online store for frostings and mini cupcakes. In Houston area, they deliver locally for a minimum order of $15, plus delivery charge of $5. For deliveries outside Houston area, Zibble Inc. ships via UPS Next Day Air delivery (includes a cooler pack to keep your products fresh and yummy).

As of August 2012, there are only two flavours for Zibble Frosting: Chocolate and Vanilla. They are vegan, dairy-free, and gluten-free, but contain soy. They must be refrigerated until ready to use and after use. They may look thick when taken from a fridge, don’t worry. Just leave the frosting at room temperature for at least 30 minutes before “frosting” anything such as cupcakes, brownies, etc. However, I left it for more than 30 minutes and the frosting was still creamy and soft, which is easy to decorate. These frostings are pretty handy to have around the kitchen, because they deliciously tops cupcakes to anything quickly! The vanilla frosting gives you the flexibility to add natural colouring since it is also used as a base frosting. The chocolate frosting has a hint of cocoa flavour, but not too strong or bitter as dark chocolate.
The ready-made frosting makes my GLUTEN-FREE desserts completely GLUTEN-FREE, which is VERY convenient!
Gluten-Free Mini Brownie Cake with Zibble Vanilla and Chocolate Frostings (Gluten-Free)
As described on Zibble Inc., these vegan mini cupcakes are indeed “all-natural, moist, bite-sized”, plus “you won’t be able to have just one.” That is very true. Mini cupcakes are hard to resist, plus they are very cute! I am very keen to see more interesting flavours for these cupcakes, perhaps strawberry, blueberry, caramel, lemon, lemon poppyseed, or something creamy in the cupcake as well as gluten-free option. Do not ever slab frosting on the cupcake, because it is a bit delicate. I have no knowledge in decorative pastries nor have any “pastry” tools to use, but I added couple of tablespoons of the frosting into a sealable bag, cut a tiny hole in the corner, and squeeze it. That was an easy decor for me! I love how the frosting came out smooth and creamy regardless of what tool you have. During the warmest days (up to 80 degrees F at room temperature), the frosting on the cupcakes remains intact. However if you leave it at room temperature or fridge overnight, the frosting was already dried, but still retain its shape.

Yes, I am no expert at decorating cupcakes or cakes… This is my first time to decorate mini cupcakes. I never made cupcakes (or my mother never made them). Usually in Taiwan, we always do desserts in soups or buy pre-made Taiwanese cheesecakes.
